Adulteration in Cake, Coffee, Chocolate & Bakery Products and health effect of adulterant:

Ingredient :

Chocolate/ Coffee Powder is used in preparation of Cake and other bakery products.

Detection of Cereal Starch as adulterant in Coffee & Chocolate powder..



  1. Take 1/4 teaspoon of coffee powder or Chocolate in a test tube.
  2. Add 3 ml distilled water in it.
  3. light a smokeless less flame and heat the content to colorize.
  4. Add about 33 ml potassium per magnate   and muriatic acid (1:1) to decolorize the mixture.
  5. the formation of blue color in the mixture, when adding a drop of 1% aqueous solution of IODINE indicate starch adulteration.




Detection of Chicory in Coffee & Chocolate Powder

  1. Generally sprinkle the coffee or chocolate powder sample on the surface of water in a glass.
  2. Coffee & Chocolate powder float over the water but chicory begins to sink down within few seconds.
  3. The falling chicory powder particle leave behind a trail of color due to large amount of caramel.

Detection of Synthetic milk& Protein in Milk and Health effect of synthetic milk




Experiment No- 6 :

  • Synthetic milk has a bitter after taste, gives a soapy feeling on rubbing between the fingers and turns yellowish on heating.
  • The milk can easily be tested by Urease strips (available in the Medical stores) because Synthetic milk is devoid of protein.

Source / Purpose of Adulteration: Urea is used as synthetic protein, easily available on Agricultural store as a fertilizer/protein is calculated by  % of Nitrogen present in milk, due to the presence of Nitrogen of Urea, on analysis milk given higher value than actual value, that’s why milk supplier mix urea.
Loss/Health Effect: Failure of Kidney, Damage Heart and Liver

Formalin detection in milk & Their Health effect


Experiment No- 5: Detection of Formalin in Milk
Formalin in Milk

 

Adulterant / Purpose of Adulteration: Formalin chemical available at chemical supplier for the purpose of preservation of dead materials/ Formalin enhances the life of milk and thus is added for preservation purpose.
Loss/Health Effect: Irritation and cancer.

  • Take 10 ml of milk in a tests tube and add 5 ml of con sulphuric acid from the sides of the wall without shaking.
  • If a violet or blue ring appears at the intersection of two layers then it shows presence of formalin.
 

Detection of Vegetable oil as adulterant(Vanaspati) in Milk

Experiment No- 4: Detection of Vegetable oil (Vanaspati) in Milk

Loss/Health Effect: Monetary loss, elevate cholestrol, diabetes and coronary ailments.
Source/ Purpose of Adulteration: Vegetable oil / Decrease the Manufacturing cost and increase fat %.



  • Take 3 ml of milk in a test tube.
  • Add 10 drops of hydrochloric acid. Mix up one teaspoonful of sugar.
  • After 5 minutes, examine the mixture.
  • The red colouration indicates the presence of Vegetable oil in the milk.
